I am a big fan of serving snacking items when hosting parties. It can be near impossible to round up guests for a sit down meal so having ready made appetizers that you can put out and not be stuck in the kitchen or corralling guests is the perfect way to host, in my mind. Here are a couple spooky appetizers for your Halloween enjoyment. Perfect to bring to a party or put out on the table if you are entertaining.
Creepy Canapé
Honestly, there’s nothing really creepy about this dish. It’s a perfect little juicy red and black bite of savoury delicious-ness. All you need is a tin of mussels in escabeche (we love the Ria De Arosa or the Ramon Pena ), a black cracker like these sesame rice crisps, and pickles of your choice. I used pickled Jalepenos. The perfect bite of savory, cruncy, pickled goodness.
Bring a medium sized pot to a boil on the stove. Carefully add in your six eggs once boiling and get a bowl of ice water ready.
After boiling for 9 minutes, removed the eggs and drop into the ice bath.
Once cooled, peel the eggs. You can do this however you prefer! I like to do so by hitting all of the eggs once with the back of a spoon until it cracks and placing them back into the ice water. I then go through and use the cracked area to peel them one at a time, dunking them once more in the ice water to rinse off any remaining shells.
Once peeled, cut all of the eggs in half and pop out the yolks into a bowl.
Mash up the yolks with a for along with the mustard, paprika, mayo, pickle relish and salted anchovies. After it is mixed well, taste and add more salt if needed.
Either scoop or pipe the mixture back into the eggs and garnish with the chopped chives and spanish white anchovies.
